Ingredients

  • 2 medium zucchinis, sliced into ¼-inch thick rounds

  • 1 tablespoon olive oil

  • ¼ teaspoon sea salt

  • ¼ teaspoon black pepper

  • ½ cup marinara or pizza sauce (low-sodium if preferred)

  • ½ cup shredded mozzarella cheese

  • ¼ teaspoon dried oregano or Italian seasoning

  • Optional toppings: mini pepperoni, diced bell peppers, sliced olives, or fresh basil

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  • Prepare zucchini rounds: Toss the slices with olive oil, salt, and pepper.

  • Roast: Arrange rounds on the baking sheet and bake for 5–6 minutes per side, until lightly golden.

  • Top it off: Spoon a small amount of sauce on each round, then sprinkle with cheese and seasoning. Add any optional toppings.

  • Bake again: Return to the oven for 5–7 minutes, until cheese is bubbly and slightly browned.

  • Serve warm — and watch them disappear before halftime!
