Roasted Delicata Squash Rings

Ingredients:

2 delicata squash, seeds removed and sliced into ½-inch rings

1 tbsp olive oil

½ tsp garlic powder

½ tsp smoked paprika

Pinch of sea salt

Instructions:

Preheat oven to 425°F (220°C).

Toss squash slices with olive oil and seasonings.

Spread in a single layer on a baking sheet.

Roast 20–25 minutes, flipping halfway, until golden and tender.

Nutrition Tip:

Delicata squash is rich in fiber and vitamin A while being naturally lower in carbs than many winter squashes — a gentle win for blood sugar balance.

The fiber and healthy fats from the olive oil help slow digestion and support steadier blood sugar.

The beta-carotene and vitamin A aid immune and eye health.

Chef Tip: No need to peel as it is also edible, and this squash is lower in carbs than lots of other squash so is kinder to your blood sugar.
